My only real concern is the hands

Yes, TST it, for a closer SBBN017 look you could fit a genuine bezel (I think it will fit the 7546 case), and I believe Harold sells tuna style hands.

Well now, there's a surprise. I wonder what the difference is? Does anybody have a reference for the hands' hole sizes for 7546 vs 7548 vs 7549?

EDIT - I did a quick search

Standard size for Seiko Automatics is 150/90/20

Info on 7549

Info on 7546, 7548

I've asked Harold... 7549 replacements fit 7549 only, for Tuna style fitting 7548, 6309, 7S26 you need to order Albacore hands from him.

And I'm going for some Albacore hands on my new one :) partly inspired by this discussion and the need to do something a big different from my 7548 TST.

Can't wait to see your TST progress Paul... It's a very satisfying process.
