That reset pin is not used when changing the cell, it is actually a post that the hacking lever makes contact with when the crown is pulled out to cut the flow of electricity through the circuit. Touching it is not required when replacing the cell. I believe DAHASCO is referring to an A/C type of contact, which is normally only found in digital-type watches to All Clear the circuit. The 7549 does not have (or need) such an A/C contact.

Yes, that is the trimmer condenser, which when rotated will change the rate of the watch. I cannot imagine doing so without access to a timing machine, as smallest amount of rotation can have drastic effects on the rate.
