Default Another Seacreechur Surf Fishing Adventure

My neighbor is another die hard surf fisherman and invited me to come down to fish with him a couple of days last week at Emerald Isle NC. They have access to apx 6 miles of beach to drive on in the fall.
The water temps have been dropping very dramatically and I did not have great expectations. We wound up catching 45 nice whitings, 10 puppy drum that were released, 8 blow fish that were released, and 2 black drum that were also released.
We experienced some beautiful sunrises and sun sets.

Aloha Sir,
Michael here we do this with that beautiful Fish.
These Fish are bottom feeders on the sand and they thrive where the water is very foamy.
Lot of small bones they have too. They also taste very good .... Deep Fried.

9 .... Ingredient's Needed for a Very Gracious Meal :

8 ......... Spring Cilantro's - Fresh ... ( Or more if wanted )
3 ...........Tbsp. Ginger ...... Grated Fresh
3 .......... Ground Up Garlic Pieces ...... or as your taste wanted.
2 .......... Scallions
Chinese Parsley ...... Adorn use as you want it to be tasted.

(Condiments)
1/4 Cup Soy Sauce- Light

Baking & Spices
1/4 tsp. Salt
3/4 Tsp. Sugar
1.... White Pepper , Freshly Ground

Oils & Vinegar's
1/4 Cup Canola Oils

Liquids
1/4 Cup Water or a little more if needed.

Place the fish in a nice size-able platter that would fit every thing.
Platter must be deep enough to cover the fish. A Platter about ... 2 inches deep just find so as
to not let the liquids spill out but submerse the fish. The Fish will appear to sizzle in the
Platter as it cooks evenly as you Braise it and that is the nice part about it.
Mix all the liquids all together in a bowl or measuring cup.
Make sure it is all dissolved good..... ( You can use a blender or just hand mix it. )
Place Fish on platter and Cut a few Angular Cuts on it so it is opened up then place all the
ingredients onto the fish evenly.

Pour evenly the blended liquid ingredients onto and smother the fish after all the ingredients are
placed onto it.
Note:
You can also cut up White Round Onion Rings and spread them onto the fish and they will cook
just fine.
Place other ingredients onto the fish after you place it into the Platter.

Note:
Cooking the fish will be your discretion on how well done you want it. Don't let it get to dry
but nice and moist for juicy taste.
( Recommended time just enough to cook it moist and not dry it up.)

Note: Special Important Attention To Braising The Fish.
( Use a large spoon or similar then scoop the sauce and spread it all over the fish then place
back into oven and repeat that a lot till satisfied when you want it done.
As the fish is in the oven you need to base it a lot so as the sauce goes into the fish and gets
soaked good and marinated.

This way of cooking can also be done using .... Chinese Black Bean Paste mixed into the
same sauce also for ..... Braising the fish.

First Picture ......... is how it should looks as it,is cooking and Braised.
Second Picture ......is how Chinese People cook it with different spices.
( you can mix the sauce and then Braise it also to the fish.
Third picture .........is how it looks using... Black Bean mixed into sauce.

NOTE:
To this a ..... WORD OF RECOMMENDED CAUTION:
Please watch for the fine small bones when eating this fish. One can gently Slip The Fish Meat
off from the ... Center and Go Up or Center and Go Down with a Spoon so it slips gently of the
... Center Bones then use a Fork or Chop Stick to pick the meat up using the Spoon also.

We all live pretty fast paced and somewhat stressful lives. A few days on the beach watching the sun rise, listening to the birds, and the slow roll of waves crashing.....what more do you need?

Always remember fishing with my dad off the coast of Mexico back when I was a kid.
